The fluffiest spiced cake

This loaf cake is so fluffy you'll be asking for more. 
Inspired by the traditional ginger bread, this spiced cake can be enjoyed guiltlessly as it is gluten and dairy free!
The honey and molasses add warmth and the spices make it a perfect treat during colder months. 
Simple to assemble, this cake is great anytime of day and is neutral for all blood types. Happy days!

Preheat your oven to 150º C.

  1. In the bowl of an electric mixer set to medium speed, whisk gradually in this order the honey with the oat flour, milk, molasses, salt, baking powder, eggs one at a time, citrus zests and spices and oil to finish. 
  2. Grease the cake moulds with butter and dust with flour. Pour the batter in the moulds and fill them only 3/4 full.
  3. Bake for 50 minutes. Remove from the moulds with the help of a sharp knife, and allow to cool on a rack.  
  • 2 cups honey
  • 3 cups oat flour
  • 1 cup almond milk
  • 2 tbsp molasses
  • 1 tsp salt
  • 2 tsp baking powder
  • 3 eggs
  • The zest of a lemon
  • The zest of a grapefruit
  • 1 tsp ground cloves
  • 1 tsp turmeric
  • 1 tsp ground ginger
  • 1/2 cup light olive oil
recipe tip: 
Blood types A, AB & O can also add 1 teaspoon of cinnamon, but it's an avoid for type B.
