Steamed eggplant in a curried onion fondue


Have you ever tried sous-vide cooking? When I got my sous-vide toy, it revolutionnised a lot of things i did in the kitchen. This was hte first trial, with my friend Yann. 
Although i have cooked the eggplant sous-vide for a few hours, the recipe below will use steamed eggplant, that is as melt-in-the-mouth gorgeous as the sous-vide. 
Eggplant has a delicate taste, and the garlic, ginger and curry leaves completement it nicely. Cook it low and slow, and melt every bite of the way!
