Scallop crudo,
ginger & citrus reduction

INGREDIENTS
4 scallops, rinsed and cleaned
The juice of a grapefruit
The juice of half a lime
2 tbsp honey
The zest of half a lemon
2 basil leaves, finely sliced
1 tsp fresh ginger,
finely minced
A pinch of ground cloves
A handful of young mint leaves
Sea salt flakes
METHOD
1. With a sharp knife, finely slice your scallops widthwise into 4 slices each. Lay flat on a plate, cover and refrigerate until needed.
2. In a small saucepan over a medium-low heat, mix the grapefruit and lime juices with the honey and bring to a simmer. Allow the mixture to reduce
to a syrup, leaving about a third of liquid.
3. In a small bowl, bring together the citrus reduction, lemon zest, basil, ginger, and mix well.
4. When you are ready to serve, drizzle the citrus- ginger mixture in the gaps between the scallop slices with a tea spoon. Gently sprinkle a touch of ground cloves with the tip of your knife, some mint leaves and sea salt flakes. Keep chilled or eat immediately!
